Olaf Sorensen is a professional trackwork rider and exercise consultant. He initially started using a low carb diet in 2012 to improve his performance and endurance while long distance running. These days, he still adheres to a low carb lifestyle and is currently following a carnivorous diet where fruit and vegetables are also excluded, meaning almost zero carbs.
Having just turned 45 years of age, his degree of leanness while maintaining fitness, strength and high energy, is now better than when he was 25, which he largely attributes to following a low carb lifestyle. Olaf writes about his personal experience on metabolicperformance.net which includes doing a ten day fast and why he got leaner after stopping long distance running.
